Crockpot Whole Chicken and Stock

 I have a huge back log things to post, maybe one day I will catch up!

This is a regular thing at our house these days because it is quick and easy and inexpensive.  I can get whole chicken for .95/lb; we use it in four ways:
Our favorite "way" we use it is in Soup and as Stock!


Ingredients for CHICKEN
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • ¼ teaspoon cayenne (red) pepper
  • ¼ teaspoon black pepper
  • 1 onion
  • Rosemary sprigs
  • Lemon cut in half
  • Apple chunks
  • 1 large chicken
Steps for CHICKEN
  1. Combine the dried spices in a small bowl.
  2. Loosely chop the onion and place it in the bottom of the slow cooker.
  3. Remove any giblets from the chicken and stuff the cavity with lemon, apple and rosemary.
  4. Rub the spice mixture all over. Be sure to put some of the spices inside the cavity and under the skin covering the breasts.
  5. Put prepared chicken on top of the onions in the slow cooker, toss a few rosemary sprigs on top, cover it, and turn it on to high. There is no need to add any liquid. 
  6. Cook for 4 – 5 hours on high (for a 3 or 4 pound chicken) or until the chicken is falling off the bone. 
  7. Leave all the juices from the chicken in the crock pot so you can make the easiest stock EVER overnight
 Ingredients for STOCK
  • Bones and onion from above (remove all the chicken from the bones)
  • Carrots
  • Celery
  • Salt
  • Pepper
  • Water
Steps for STOCK
  1. After eating the chicken and removing the meat from the bones place the bones back into the crockpot
  2. Break up the carrots and celery by hand into large chunks--no need to cut or peel!
  3. Fill the crock up with water
  4. Add salt and pepper to taste
  5. Turn to low and allow to simmer over night--We usually eat the whole chicken with sides for dinner then I make the stock overnight.  The next morning I remove the lid and crank it up to high until noon to concentrate the flavor some---this is optional.  The stock is ready the next morning.
  6. DONE!  You can refrigerate the stock for several days or freeze it---I use it right away in a soup!

Timing: 7/8 Months; The chicken is super soft.  If you are uncomfortable offering it as a finger food pulse it in a food chopper for a few seconds.

of 5--for what you get in return on making this, its EASY!

Oatmeal Pancakes


Whew...it has been a while since I have been able to post!  We had a third baby and my husband had to leave town for 8 weeks for work.  Translation:  Life has been crazy!  BUT...I am back and Epicutie Juliette will be reviewing recipes soon!

I am nursing so I am always on the prowl for recipes with oatmeal!  This recipe was inspired by a cooking light recipe.

Ingredients:
  • 1/4 ounces all-purpose flour
  • 1 cup quick-cooking oats
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup nonfat buttermilk (we use almond milk for dairy free)
  • 2 tablespoons butter, melted (we use canola oil for dairy free)
  • 1/2 teaspoon vanilla
  • 1 large egg
  • Cooking spray


Steps:
1.  Spoon flour into a dry measuring cup; level with a knife. Combine the first 7 ingredients in a medium bowl, stirring with a whisk.
2. Combine milk, butter/oil, vanilla, and egg in a small bowl.
3.  Add to flour mixture, stirring just until moist.
4. Heat a nonstick griddle over medium heat. Coat pan with cooking spray. Spoon about 2 1/2 tablespoons batter per pancake onto griddle.
5.  Turn pancakes over when tops are covered with bubbles; cook until bottoms are lightly browned.

Serve:  serve warm with pure maple syrup and fresh berries. 

Difficulty:  1 out of 5; quick prep!

Tips:  combine dry ingredients the night before to save time in the morning. Another idea, double the recipe and freeze half for a last minute breakfast another day'

Dairy Free Mexican Pizza

I got my inspiration for this dairy free pizza from godairyfree.com. The original recipe called for olives and we DO NOT like olives but I liked the base recipe so away we went!

Ingredients:
Avocado Cream Sauce:
  • 1 ripe avocado
  • 1/3 to ½ cup Dairy Free Plain Greek Style Cultured Almond Milk (Yogurt)
  • ¼ teaspoon ground cumin
  • ⅛ teaspoon salt

Mexican Pizza:
  • 1 ball pre-made dairy-free pizza dough (I made mine in my bread machine)
  • 1 tablespoon olive oil
  • 1 cup grape tomatoes, sliced thin
  • 3 green onions, diced
  • ½ lb ground meat of choice, browned
  • 1 tablespoon nutritional yeast
  • 2 tablespoons non dairy Parmesan 
  • ½ cup dairy-free Monzerella cheese 


Steps:
For the Avocado Cream Sauce:
  1. Pit the avocado and scoop the flesh into a food processor.
  2. Add all other ingredients and process until completely smooth.

For the Mexican Pizza:
  1. Preheat oven to 400ºF.
  2. Stretch the dough onto a pizza pan or cookie sheet and brush with olive oil.
  3. Spread the avocado mixture onto the dough leaving about ½” border around the edge.
  4. Evenly sprinkle on the remaining ingredients, adding cheese last. 
  5. Bake the pizza until the crust is golden brown, about 20 minutes.
  6. Cut into slices and serve with your favorite hot sauce or salsa


Difficulty: 3 out of 5; I only give it this high for difficulty because i homemade the dough. Store bought dough would give this a 2!

Yield: 6 people

Serve:  We served with salad and fruit to our 2 and 4 year old.

Tips/misc:  if you do not care about dairy free there's a few substitutions you can make....
  • dairy free yogurt = sour cream
  • dairy free mozzarella = mozzarella 
  • dairy free Parmesan = grated Parmesan 

Another tip, chop and brown the meat earlier in the day when your kids are napping or occupied versus waiting for the dinner rush to do everything 

Timing:  12 months. It's pizza and there's lots of seasonings going on here. Chopped small I think 12 months is fine!

  • Little Asher:  Somewhat Yummy he is the skeptic. He ate his slowly and liked it enough to eat it without too much encouragement. He pulled everything apart and ate it like that. 
  • Mommy and Daddy: Oh man. I love this!  It wasn't heavy like traditional pizza but made me feel like I was eating regular pizza!  This is on my short list.

Raw Green Applesauce

I know that I have yet to post on Green Smoothies as I promised and as my penpal reminded me Smile, but I sat down to do it and realized that it was going to be much more involved than I had originally thought… and I just have not had the time. I wanted to try a few new recipes before I do that big post, but while I was searching I found this recipe at RawFamily.com. I love raw recipes! Its not a movement that I see myself joining, but raw usually translates to “easy” and “healthy” and I need to start frequenting more raw recipe websites and cookbooks!
Anyway, I found this recipe and I had to try it! It was just what a raw recipe should be – easy, fun. I enlisted the help of Little Frances to help me make it! Its so fun to have extra hands in the kitchen as our epicuties get bigger!
Ingredients:
  • 4 apples
  • 1 banana
  • 2 to 3 cups chopped romaine lettuce
  • ½ teaspoon cinnamon
  • up to 2 cups water
Steps:
  1. Chop apples into pieces, removing the core.
  2. Place half the water and the rest of the ingredients together in a blender or a food processor.
  3. Blend/process!
  4. Add more water if needed until you reach desired thickness.photo (21)
Yield: 3 cups
Storage: This can be kept in the freezer for up to 2 months. In the fridge, I would recommend no longer than 2 or 3 days since it is a raw recipe.
Difficulty: 1 out of 5. Easy, like most of the recipes I post on here.
Timing: 8 months. This is about the average age for introducing greens to small babies from what I can find.  Some recommend earlier, some recommend later. If you have concerns, speak with your pediatrician.
Miscellaneous: Our applesauce turned out a little brown since I had bought a pre chopped and rinsed salad kit that contained both red and green romaine lettuce. I also made the mistake of adding all of the water at once so it came out a little more soupy than saucy!  I recommend starting with a more conservative amount of water and adding as desired.

Turkey Sloppy Joes


I got this recipe from "Once a Month Mom"'s dairy free gluten free menu---I LIVED on this site when I was on the elimination diet with Little Asher and a lot since then because he dairy intolerant....still.  The original recipe makes 8 servings and its just too much so I halved it to see if it still worked well and it does--I had to alter the cooking times a bit too, so here is my version!

I also LOVE slow cooker meals because I can get it in there before the kids are up or when they are busy :)

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, minced
  • 3 carrots, finely minced
  • 1 pounds ground turkey
  • 1/2 cup gluten free ketchup, fruit juice sweetened preferred
  • 1 tablespoons brown sugar
  • 2 teaspoons gluten free yellow mustard
  • pinch of salt, optional
  • pinch of ground pepper

Steps:

  1. Heat oil in skillet over medium to medium-high heat.  Sauté onion and carrots until onion is translucent, then add ground turkey.
  2. Using a heat safe spatula, break up meat in skillet until turkey is completely cooked about 5 more minutes.
  3. Transfer to crock and add rest of the ingredients.
  4. Mix well, cover then cook on high for an hour and lower to low for about 4-6 hours until flavors are combined and  vegetables are softened.  
  5. Check about 1/2 hour before eating and see if the sloppy joes look too “juicy”.  If they are, I remove the lid of the crock and cook on high, stirring periodically until the right consistency is reached.  When the recipe is halved it is usually the right consistency when ready to eat.
Difficulty 3 out of 5; I only give it a 3 vs 2 because it is not a dump into the crock pot and go---you have to brown the meat and cook the veggies first.

Tip:  This is a GREAT freezer meal.  Do steps one and two, allow to cool, place in a freezer bag along with all other ingredients--FREEZE!  When you are ready to use it, thaw over night, place in crock pot and cook on low for about 7 hours and ENJOY!  I am thinking of all you working moms out there!

Timing:  Unless this is pureed, I would recommend waiting until around 14 months or so.  It can be strange to eat and difficult unless you have a palete used to these things or VERY good chewing skills.

Serve:  We serve this over a piece of homemade bread (also easy to do before you leave for work) along with another veggie!  Double veggies is always good in my book!

Little Joy:  Somewhat Yummy; when we first had this about a year ago she went crazy over it but now she eats it just without huge zesto--which is fine.  Cant love EVERY food, but tolerate every food is the goal!
Little Asher:  Yummy in the Tummy; it took him a little while to grow into liking this, but he is ON BOARD!

Whole Wheat Banana Pancakes


Bananas.  Oh bananas.  These are always plentiful in my house but sometimes, they get too ripe too fast for us, so I use them in other ways and this recipe is one way!  This recipe is from 100 days of real food, with some alterations for dairy free!

Ingredients:

  • 2 cups whole-wheat flour (I use King Arthur’s organic white whole-wheat flour)
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 tablespoon honey
  • 2 large eggs, lightly beaten
  • 1 ¾ cups almond milk (or any other milk alternative, for those not avoiding dairy use regular milk!)
  • 2 tablespoons unsalted butter (we use Earth's Best Soy Free lactose free butter), melted
  • 2 ripe bananas, mashed
  • 100% pure maple syrup for serving

Steps:

  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. In a separate bowl, mix together honey, eggs, milk, and 2 tablespoons of melted butter.
  3. Make a well (hole) in the center of the flour mixture and pour the liquid mixture into the center; mix to combine but do not over mix!
  4. Gently fold the mashed bananas into the batter with a spatula.
  5. Heat a griddle or sauté pan over medium-high heat (if you are using a pan swirl some butter in there, if using a griddle this isn't needed).  Add pancake batter using a 1/4 or 1/3 measuring cup.
  6. When the pancakes have begun brown on the bottom and start to bubble on the top, flip them over to cook the other side.
  7. Serve with maple syrup!
Difficulty:  2 out of 5; for pancakes, this is pretty easy!

Tip:  Freeze leftover for a quick breakfast another day!

Timing:  I serve pancakes as early as about 10 months since my babes show good chewing ability, but by 12 months I think these would be great for any toddler as long as they are cut up small!

Banana Porridge


If you want easy---this is IT....Banana Porridge!   This is my go to breakfast for my kids and has been since they were both about 15 months old.

Ingredients:

  • Ripe Banana
  • 1/2 Cup Quick Oats 100% Oats Oatmeal
  • 1 Cup Water (or Milk)
  • Dash of Salt
Steps:
  1. Cut the banana into small pieces (I usually cut it lengthwise in an X and then slice horizontally making small triangle pieces.  Place in a large cereal bowl.
  2. Add oats, water and dash of salt into bowl.  Stir to combine.
  3. Microwave for two minutes.
  4. Remove from microwave and allow to stand for at least 5 minutes (so it can thicken).
  5. Serve...watch out its hot!
Yield:  I split this between my 21 month old and 3 year old and its JUST enough for them both so---two hearty toddler servings.

Note:  I have also used applesauce and cinnamon vs bananas and even strawberries too!

Timing:  As early as 9 months if they are good at chewing

Difficulty:  1 out of 5; easy as it gets!

Little Joy and Little Asher:  YUMMY IN THE TUMMY!  Sometimes Little Joy gets tired of having it day in and day out but she always gobbles it up and then sometimes says "so tomorrow we will have something new" :)

Tomato, Carrot and Kale Spaghetti


So this recipe was created by my friend Meg for her little boy Calvin, and I asked her if I could feature it on LTY.  I made this recipe last month and I think that it is going to be my new go-to spaghetti sauce.  I doubled the recipe and froze the sauce and its so nice to have on hand in a pinch.  Please ignore Little Frances’ reaction – she may be the only child in history to not like marinara sauce! This recipe is delish.
Ingredients:
  • 1 tablespoon olive oil
  • 1/2 of a large onion chopped, about 1/2 cup
  • 2 cloves of garlic, or a teaspoon of jarred garlic
  • a handful of baby carrots chopped, about 1/2-2/3 cup
  • 2 16 ounces cans of whole tomatoes, no salt added.
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 shakes of red pepper flakes or 1/8 teaspoon – omitted
  • 2 handfuls of chopped kale, approximately 1 cup
  • Spaghetti or other type of pasta – we used spinach spaghetti to add just a little extra green to our meal!
Steps:
  1. Heat oil in a saucepan.
  2. Add onion, garlic and carrots and cook for 5-7 minutes.  Stir occassionally.
  3. Start water boiling for pasta.
  4. Drain juice off the tomatoes and add the tomatoes to the pan.IMG_1850
  5. Add basil, oregano, salt, red pepper flakes if using, and kale.IMG_1851
  6. When water boils, begin cooking pasta.
  7. Bring sauce to a boil, crushing the tomatoes.
  8. Reduce to simmer and cover and cook on low.  A minute or so before the pasta is done, blend the sauce using an immersion blender, or place it in a blender or food processor
  9. Serve the sauce over the pasta and sprinkle with parmesan cheese.photo (7)
Misc: Don’t you think Little Frances’ spaghetti looks a little bit like a heart? Serve it with salad or a side of steamed broccoli and you have a nice family meal.
Timing: The ingredients can technically be introduced at 1 year, although with noodles I would suggest waiting until 18 months or you feel like your little one can handle chewing the noodles.
Difficulty: 3 out of 5. It was pretty easy, but it did have a lot of steps and you can’t just throw everything in at once and let it cook.

Confused. So Little Frances does not like spaghetti!  Until fairly recently she did not even like noodles, although now she loves them.  Usually even if she does not love something, she will eat it if I give it to her by hand and/or add a little cheese, but this she was not willing to eat this after a bit or two.  We are going to keep working on spaghetti sauce until she likes it!

Although Little Elizabeth is not yet old enough for solids, it seems she wanted a little taste of what we were eating and she reached down and helped herself to some of my salad! Smile  More on her first foods in the next few weeks.

Chicken Avocado Quesadilla


 Since avocados have been on sale, this has become a regular at my house lately--and no one is complaining! We eat this for lunch or dinner!

Ingredients
  • 1 Cooked chicken breast (I throw a chicken breast in my steamer)
  • 1 avocado, sliced thinly
  • Shredded cheese (montery jack, monzerlla, Go Veggie! lactose free cheese--to make it dairy free)
  • Butter (Earth Balance Lactose Free butter alternative to make it dairy free)
  • Whole wheat tortillas
  • Lime
  • Salt
  • Pepper
Steps

  1. Preheat a griddle to 225-250 degrees.
  2. Shred chicken.
  3. Toss shredded chicken with a couple squeezes of lime, dash of pepper and dash of salt (optional).
  4. On one half of the tortilla, place a few thinly sliced avocado pieces (I actually mash it up and spread it on the tortilla for Little Asher who is texture sensitive), some shredded chicken and a little shredded cheese. Fold the tortilla in half.
  5. Put a thin layer of butter on the outside of both outside sides of the tortilla (I omit this on my quesadilla).
  6. Cook on griddle until both sides are browned.
  7. Allow to cool slightly and slice into triangles.

Miscellaneous: We usually eat this with crock pot vegetarian black beans (this recipe is next in the line up and I will link to it when available).

Tip:  Make the chicken ahead and put it in the fridge so that when it is time for dinner all you have to do is assemble and grill--easy!

Yield: Depends on how much chicken you use, but when we do one large chicken breast it feeds my family of four...which is about 6 quesadilla

Timing:  9-12 Months depending on your little ones ability to chew and grind and the number of teeth.  Little Asher was able to handle this cut up very small around 10 months and I would imagine Little Joy would have been around the same age had I tried it back then.

Difficulty: 2 out of 5; this is easy and can be partly made ahead.  Very few things get a 1 on difficulty from me; I reserve that for things I can do in my sleep!

Apple and Butternut Squash Soup


We had a big snow a few days ago (more is headed this way) and nothing says snow to me than homemade soup.  Of course, I look for any reason to make soup.  This simple recipe comes from a 2011 issue of Parents magazine; the cut out had slipped to the bottom of my pile!

This is on the fall/winter short list, the whole family enjoyed it!  It was easy, healthy and delish!

Ingredients:
  • 1 tablespoon olive oil
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1/3 cup chopped onion
  • 1 1/2 lbs butternut squash, seeded and cut into 1-inch cubes (approx. 3.5 cups)
  • 2 medium apples, cored and cut into 1/2-inch pieces
  • 4 cups low sodium chicken broth
Steps:
  1. In a large pot, heat oil on medium heat.
  2. Add carrots, celery and onion.  Cook, stirring occasionally, for 8-10 minutes or until tender and starting to brown.
  3. Add squash, apples and broth.  Bring to a boil.  Reduce heat and simmer uncovered for 20 minutes or until squash is tender.
  4. Cool slightly.
  5. Puree soup in batches using a food processor or all at once using an immersion blender.
  6. Add salt and pepper to taste.
Yield:  Six adult servings.

Timing:  9 months; its like a puree so it should be easy to serve up to baby.  Just be sure to test these ingredients separate first to ensure no allergies.

Difficulty: 2 out of 5; the hardest part is peeling and cutting the squash.  It is VERY easy as far as soups go and it does not require a lot of attention while it cooks--which is always good for me!

Tip:  Chop everything but the apples earlier in the day or the night before to save time at dinner prep time.  This time of the day is always the most chaotic for me...kids waking up from naps (sometimes too early), daddy coming home, making dinner, kids getting hungry, etc.  So anything I can do to save time and minimize chaos around dinner time is great!

Personal BBQ Pizzas, A Non dairy version too!

This recipe is inspired by one I found in Parents magazine, which if you follow my posts much you will see I gain inspiration from often!

I am constantly on the prowl for things I can make a dairy free (or low dairy) for my sweet Little Asher. What I love about this dish is its personal pizzas...easy to make a dairy free one for him and dairy filled for my Little Joy! Aside from dough rolling, this was an easy and delicious and healthy lil dinner. I generally do not like BBQ pizzas but this even I enjoyed! It's in the make once a month list!

Ingredients:

  • whole wheat pizza dough (I used my bread machine and made 8-4 inch pizzas, you could buy prepared dough; my homemade dough was dairy free)
  • 5 tablespoons barbecue sauce
  • 1 medium carrot finely shredded (I used a zester)
  • 1 chicken breast cooked and chopped
  • 1/4 cup finely chopped green bell pepper
  • Monzerella cheese/veggie cheese
  • olive oil


Steps:

  1. Preheat oven to 425 degrees
  2. Roll dough into 4 inch personal pizzas and place on a greased cookie sheet.
  3. Using a fork, poke holes in the crust and brush with olive oil.
  4. Bake at 425 degrees for 8 minutes (I baked my extra personal pizza crusts and then froze them for a quick pizza another day).
  5. Meanwhile, place sauce and carrots in a small sautée pan and summer for 5 minutes (you could probably skip this step but I wanted my carrots soft)
  6. After the crust is done baking, top it with sauce, chicken peppers (I steamed mine with a little water for 2 minutes to soften to make them a little easier for the kids to eat) and cheese of choice.
  7. Return to oven for an additional 8 minutes or until cheese is melted.
  8. Allow to rest for 5 minutes before serving.
  9. ENJOY!


Yield: Depends on the amount of dough you use. I made 8 pizza crusts from one batch of dough in my bread machine.

Timing: Pizza can be tough, so depending on teeth I would say 12 to 15 months. If your little one is good with his molars then this pizza is fine!

Difficulty: 3 out of 5
It really was easy minus the homemade dough part.

Little Joy: Yummy in the Tummy...she gobbled up a little over half a pizza (in addition to steamed carrots and fruit)
Little Asher: Yummy in the Tummy...he ate 3/4 of a pizza!!! Yummmm!

Classic Chicken Noodle Soup

This recipe was inspired by the greatest chef I know, my mother. It's simple yet scrumptious. Soup soothes the soul on a cold day, we love soup! Soups can be difficult for young children not only because of the broth but because of all the varying textures. However, I am happy to report both my epicuties loved this simple soup, even the texture adverse Little Asher!
Ingredients:
-4 medium carrots, finely diced
-4 celery stalks, finely diced
-1/2 to 1 medium sweet onion, finely diced
-2-4 tablespoons olive oil (could use butter instead or half butter, half olive oil)
-1/4 cup flour
-10 1/2 cups chicken stock (more or less depending how much broth you want; I used Knoors chicken stock concentrate and loved it)
-Store cooked Rotisserie chicken, per cooked (this was left over from dinner a few nights before)
-Wheat egg noodles (amount depends on how many noodles you like)
-Salt and Pepper to taste
-Frozen peas (amount it to your liking)
Steps:
1) Heat oil in large stock pot and add onions, carrots and celery. Sautée until all veggies are soft.
2) Add flour and cook for two more minutes.
3) Gradually add chicken stock until boiling.
4) Add coarsely chopped chicken and uncooked noodles, bring to a simmer. Continue to simmer until noodles are cooked to al dente
5) Add salt and pepper to taste.
6) Add frozen peas and cook for 3-5 more minutes.
Serve: We used kitchen scissors to coarsely chop the soup and removed the majority of the broth for Little Asher. We cut the noodles up slightly for little joy but gave her broth!
Yield: oh way too much. Like 10!!!!
Timing: 9 months. Everything was super set and easy to gum with very few teeth, especially if you coarsely chop it.
Difficulty: 3 out of 5; I only give it what high of a rating because the chopping can be time consuming. Minus the chopping this is a one. Tip: chop the day before or earlier in the day when kiddos are sleeping.

Sage Scented Fettuccine and Butternut Squash and Chicken

I found this recipe on www.godariyfree.com and tweaked it to work with the ingredients I had on hand.  WE LOVED THIS!!!  And it felt so....FALL!

Ingredients:
  • 3 Tablespoons Olive Oil, divided
  • 1 Pound Butternut Squash, peeled, seeded and dice into 1/4-inch cubes
  • Sea Salt
  • 1 Cup Chicken Stock (mine was homemade using a variation of this recipe: Chicken Stock)
  • 1 Yellow Onion, halved and cut into 1/4-inch slices
  • 1/4 Cup White Wine
  • 1 Tablespoon Maple Syrup
  • 1/2 Tablespoon Raspberry Balsamic Vinegar**
  • 1/2 Tablespoon White Wine Vinegar**
  • 2 Teaspoons Rubbed Sage
  • 6 Ounces Fettuccine 
  • 2 Tablespoons Nutritional Yeast (I could not find this so I omitted it, but it is a great substitute for cheese, I plan on ordering some and trying this again)
  • Freshly Ground Black Pepper
  • Fresh Sage Leaves, optional
  • 6 chicken tenderloins
  • garlic powder
**Alternatively use 1 Tablespoon Balsamic Vinegar instead of Raspberry Balsamic and White Winne Vinegar; the original recipe called for this but I had to improvise because I did no realize I was out!


Steps (fettuccine):
  • Heat 1 tablespoon of the oil in a large skillet over medium-high heat.
  • Add the squash, sprinkle with salt, and cook for 5 minutes. Don’t worry if the squash starts to break apart.
  • Add the chicken stock and cook, still stirring gently until the liquid is almost evaporated, about 7 minutes.
  • Add the onion and season with a little more salt. Cook until the onion begins to soften, 3 minutes.
  • Add the wine, and cook until moisture is almost evaporated and mixture is caramelized.
  • Stir in the maple syrup, vinegars, and sage. Keep warm.
  • Cook the pasta in a pot of boiling salted water until tender, about 10 minutes.
  • Drain the pasta and return it to the hot pot.
  • Add the remaining 1 tablespoon oil, the nutritional yeast, and salt and pepper to taste; toss to combine.
  • Add the vegetable mixture to the pasta and toss again to combine.
  • Serve hot garnished with fresh sage leaves, if using.
Steps (chicken):
  • Cut chicken into bit size pieces.
  • Heat 1 tablespoon of of oil in a medium skillet over medium heat.
  • Place chicken in pan and sprinkle with salt, pepper and garlic powder--this is to taste.
  • Flip chicken and sprinkle again.
  • Remove from heat when cooked through.
Serve:  Serve the chicken and the pasta tossed together or the chicken on the side; we served it separate and just mixed some bites together and others not.  We did remove the larger pieces of onion before serving it to our 11 month old; our 2 year old did not notice the onions mixed in.

Yield: 4 servings

Timing:  Due to the wine and spices I would recommend around a year.  Little Asher was 11 months and is still cutting 6 teeth on top (not all the way in) and he ate it all fine.  He ate the chicken chunk-ed up just fine too!

Storage: 3-5 days in the fridge.  I am going to attempt to freeze the "sauce" to see if it reheats well; I would imagine so.

Difficulty:  3 out of 5; I ONLY give this a 3 because I had to stand over it and stir.  Anything that I have to stand over while I have a 1 and 2 year old running/crawling around automatically gets difficult.  However, no kids---this is a 2 easily.

  • Little Joy:  Somewhat Yummy; she joyfully ate it but like most two year olds she just acted difficult when she saw we were thrilled she loved it (because we loved it too).  She ate a big helping of noodles.
  • Little Asher:  Yummy in the Tummy; Little Asher has been funny with finger foods.  Around 9 months he did not want anything to do with purees and then around 11 months he decided purees were preferred (we chalk it up to cutting 8 teeth the past month). BUT thats how we knew he loved this---he gobbled up a TON even after a full meal of purees.  SCORE!

Zucchini Muffins


I am always looking for quick and yummy breakfasts for my family.  When I make a batch of muffins, I wrap them individually in plastic wrap then place in a freezer bag and pull them out as we need them.  Currently we have whole wheat blue berry, pumpkin and zucchini muffins all stocked in the freezer.  This might not be THE healthiest muffin recipe, but I have not tried altering it too much yet.  It was too yummy not to share this version of it.  Next time I will try 1/3 oil and 1/3 applesauce as well as decrease the sugar some r replace some of the sugars for honey or maple syrup.  At this point, I will take just about anything that's dairy free though!

Ingredients:

  • 2/3 cup canola oil
  • 2 large eggs
  • 2/3 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat flower
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups finely shredded unpeeled zucchini
  • 1/2 cup finely shredded carrot

Steps:

  1. Grease and flour or paper 12-16 muffin cups.
  2. Heat oven to 375°.
  3. In mixer fitted with the paddle attachment, beat the oil with eggs, sugars, and vanilla extract.
  4. In a seperate bowl, combine the flour, soda, baking powder, salt and cinnamon; add to the wet ingredients; mix on LOW until blended.
  5. Fold in the shredded zucchini and carrots (the mixture was REALLY thick)
  6. Fill muffin cups about 3/4 full; sprinkle with cinnamon, if desired.
  7. Bake for 20 minutes.
**Allergy Alert** contains eggs

Yield:  12-16 muffins

Storage:  Serve immediately or at room temperature same day.  After the first day, refrigerate for several days or freeze for up to a month.

Difficulty:  2 out of 5; the most "difficult" part is shredding the carrots and zucchini.  It only took me about 15 minutes to get these mixed and in the oven so its pretty quick.

Timing:  One year due to the eggs, however I gave these to Little Asher at 11 months.  As always, ask your pediatrician before introducing ingredients that are common allergies.

Minestrone Soup


This recipe was adapted from one I found on foodnetwork.com.  I love soups, there is something so homey about this one.  I particularly enjoyed this one because 1) its easy, 2) its a crock pot recipe and 3) it made my house smell awesome.

Ingredients:

  • 4 cups reduced-sodium vegetable or chicken broth or combination
  • 1 (28-ounce) can diced tomatoes
  • 1 (15-ounce) can white (cannellini or navy) beans, drained
  • 1 cup uncooked lentils (sorted first)
  • 2 carrots, peeled and chopped
  • 1 celery stalk, chopped
  • 1 cup onion, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 3 bay leaves
  • Salt and ground black pepper
  • 2 cups cooked pasta (ditalini or other small pasta)
  • 1-2 medium zucchini, chopped
  • 1-9 oz package chopped frozen spinach, defrosted
  • 4 tablespoons grated Parmesan or Romano cheese (omit for dairy free)
Steps:
  1. In a slow cooker, combine broth, tomatoes, beans, lentils, carrots, celery, onion, thyme, sage, bay leaves, and 1/2 teaspoon each salt and black pepper. Cover and cook on LOW for 6 to 8 hours.
  2. Thirty minutes before the soup is done cooking, add pasta, zucchini and spinach.
  3. Cover and cook 30 more minutes. Remove bay leaves and season, to taste, with salt and black pepper.
  4. Ladle soup into bowls and sprinkle Parmesan cheese over top (omit for dairy free)
Tip:  I chopped my onion, celery and carrots the night before cooking and placed them in an air tight container in the fridge.  This really expedited the cooking the next morning when my house was filled with the usual morning chaos!

Yield:  The original recipe says 4, but I say more like 6

Storage:  Fridge for close to a week or freezer for 1-2 months.

Timing:  10 months; This is mild and since it is a soup everything is very soft.  When we served it to our 10 month old, we just pulled everything out of the broth.  Assuming each ingredients has been tried individually on your little one, I would say 10 months is plenty old enough to try this.

Difficulty:  2 out of 5; its a dump and go recipe---easy and fast!!

  • Little Joy:  Somewhat yummy; we are at the fun age where Little Joy likes to exert her will.  She liked it, but did not want to admit she did.  My husband and I LOVED IT.  And when I eat it as leftovers for lunch, Little Joy is always asking for bites.
  • Little Asher:  I refuse to comment on his ratings lately.  He is cutting eight teeth and only want purees.  So annoying!!!  I am ready to be DONE with teething!

Tofu Nuggets with Dipping Sauce

Admittedly, I am running low on good finger foods for Little Asher.  At first he was all about finger foods and gobbled them up then recently he has gotten lazy and just wants to be fed.  Awkward age I suppose.  He did seem to really like these as did Epicutie veteran Little Joy.  My husband and I both like them, they taste every similar to a chicken nugget with slightly less flavor on the "meat".  This was adapted from a recipe on wholesomebabyfood.com

Ingredients (Nuggets):

  • 1/2 package firm tofu
  • 1/8-1/4 cup flour (more or less)
  • 1 egg yolk
  • 1 cup fine dry bread or cracker crumbs (I used Italian bread crumbs)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • A few grinds of pepper
Steps (Nuggets):
  1. Preheat oven to 350
  2. Cut tofu into whatever size/shape you would like (perhaps fun shapes for toddlers)
  3. Spread flour on a small plate or flat dish. 
  4. Beat egg yolk in a shallow dish. 
  5. Mix remaining ingredients in shallow dish. 
  6. Coat each piece of tofu in the flour to cover, then into the egg, then crumbs, and then to a baking sheet.
  7. Chill for 30 min to an hour to set the coating (you can just bake right away if you want this isnt a totally necessary step).
  8. Bake 15-20 minutes until crisp.
Dipping Sauce:  I used peach puree.  For my 10 month old I dapped a little on each nugget and for my 2 year old I gave her a little dab on her plate to dip from.  I made the peach puree too (I will have to post about that later).

Storage:  I did not try to freeze them but I imagine it would freeze well and could be thawed and reheated in the toaster oven.  I kept mine in the fridge for about 4 days before it was used up.  I reheated in the toaster oven.

Timing:  8-10 months; these are very soft but watch your little one because they may try to swallow them whole depending on the size you cut them.

Difficulty: 2 out of 5.

Little Joy:  Somewhat Yummy; She liked it but I would not say she ate it with her usual zesto.  Course she is a 2 year old and most 2 year olds do not enjoy change.
Little Asher:  Yummy in the Tummy; I had to make Little Asher slow down because he was not chewing well enough.  He had them several times before they were all eaten up.

Lovely Lentil Stew

This is another great one from Dr Joel Fuhrman.  Its probably the easiest family food I’ve made, and can be eaten at as young as 8 months (as long as you leave out the pepper)!

Items:

  • 1 cup lentils
  • 3 cups water
  • 1/2 medium onion, finely chopped
  • 1 teaspoon black pepper
  • 1 teaspoon basil
  • 3 tomatoes, chopped
  • 1 stalk celery, finely chopped

Steps:

  1. Cook lentils in water for 30 minutes with onion, pepper, and basil.
  2. Add tomatoes and celery and cook for an additional 15 minutes.

Difficulty: 1 out of 5!  Its so easy and only takes one pot, my kind of dish!

Timing: 8 months.  I would leave out the pepper and add it later if serving to children under 1 and using it as a family good.

Epicutie Rating: (See left side of the page for descriptions) Somewhat Yummy.  Little Frances ate this like a champ, but I wouldn’t say that she loved it.  For the record, mom and dad liked it pretty well for such a healthy food with no salt added!

Tofu Bites

Tofu is full of protein so I like the idea of eating it, but even after all the time I spent in China--I still do not love it.  However, just because I do not love a food does not mean I should push my preferences off on my epicuties; my worst food nightmare could be my children's delight.  It is my responsibility as a parent to provide them opportunities to experience new things (including food) even if my personal preference is against it (i.e. tofu, cheerleading for Addison, football for Caleb, brussel sprouts, peas, tatoo artistry, etc, you follow me).

Here is a simple way to serve up tofu as a finger food.  It is a great food as an early finger food (particularly those without many teeth like Little Asher) because its super soft.

Ingredients:
  • Firm tofu
  • Dusting of your choice (crushed graham crackers, cherrios or infant cereal; wheat germ, etc.)
Steps:
  1. Crush your dusting in a ziplock bag.
  2. Cut tofu into cubes or shapes of your choice.
  3. Place tofu in ziplock bag and shake until well coated.
  4. Serve immediately, discard left overs.
Difficulty:  1 out of 5; super easy, no cooking

Timing:  8 months; Some books say 6-9 months for tofu so I suggest somewhere in the middle around 8 months.  It is soft so it does not require any teeth.

Storage:  Storage any left over tofu according to the package instructions, however I would not save any leftovers of this food.  It seems like the dusting would get mushy--yuck!

Tip:  I would air on the side of too much dusting at first.  I think my children did not like it because it was too lightly dusted.

Little Joy (2 years):  Sour Puss; she was a great sport.  She TRIED her hardest to like it but she just did not enjoy it; poor thing.  She rarely turns her nose up at a food so I felt bad she hated it so!
Little Asher (9 months):  Sour Puss; he tried several bites and his face got more and more sour.  It was a texture thing I believe.
