Butternut Squash Mac and Cheese

This recipe was inspired by a Parents Magazine recipe.  The original one had chunks of butternut squash whereas mine has puree; it saves me time just having purees already made vs having to cook the chunks of squash when I make this.  That is how this recipe was born....

Ingredients

  • 1 1/2 cups butternut squash puree (less if you want the squash taste less pronounced)
  • 1/2 lb elbow noodles of your choice
  • 2 tablespoons butter (we used butter alternative to decrease the dairy amount in here for dairy intolerant Little Asher)
  • 2 tablespoon flour or tapioca flour
  • 1 1/2 cups almond milk (or reduced fat milk or other milk alternative)
  • 1/4 teaspoon nutmeg
  • dash of salt
  • dash of white pepper
  • 1 3/4 cups cheese (I used a mixture of part skim mozzarella and reduced fat cheddar--the high fat content is what bothers lactose intolerant folks; If I could do what I wanted I would use WHITE CHEDDAR)
Steps:
  1. Preheat oven to 375 degrees.
  2. Grease a medium casserole dish.
  3. Cook the elbow noodles 2 minutes less than the box says.  Drain and place in a large bowl.
  4. Meanwhile, melt butter over low heat.
  5. Whisk in flour and cook for 2 minutes.
  6. Slowly whisk in milk.  Bring mixture to a boil, add nutmeg, salt and pepper, then simmer.  Cook for 3 minutes; stirring occasionally making sure the lumps mix out.
  7. Add cheese and squash and stir until cheese is melted.
  8. Stir cheese sauce into pasta and transfer to greased casserole dish.
  9. Bake for 10-15 minutes.
NOTE:  You can top this with turkey bacon crumbles or buttered crumbled wheat crackers or more cheese.  Get creative.  This time I tried buttered crumbed wheat crackers and it added a nice texture/

Difficulty:  2 out of 5; with the puree already made this was easy peasy!  I made it about an hour before I wanted to bake it, covered it in the oven and when it was almost time to eat I took the lid off and baked.  You could also make this during nap time or in the morning and refrigerate until ready to bake.  Increase the bake time if you refrigerate.

Timing:  I would give this to mine as early as 9 months depending on their chewing abilities.  Mine love finger foods so 9 months is good for mine---otherwise around 12 months is perfect!

  • Little Joy:  Yummy in the tummy!  She loved the crunch--she's my one with a bit of a mature pallete.  She likes lots of flavors like her mommy.
  • Little Asher: Yummy in the tummy!  He does not have mac and cheese much because it is too much dairy but since there is not as much dairy to pasta with the squash in there, it is quite a treat!  He gobbled up two hardy helpings.

Tomato, Carrot and Kale Spaghetti


So this recipe was created by my friend Meg for her little boy Calvin, and I asked her if I could feature it on LTY.  I made this recipe last month and I think that it is going to be my new go-to spaghetti sauce.  I doubled the recipe and froze the sauce and its so nice to have on hand in a pinch.  Please ignore Little Frances’ reaction – she may be the only child in history to not like marinara sauce! This recipe is delish.
Ingredients:
  • 1 tablespoon olive oil
  • 1/2 of a large onion chopped, about 1/2 cup
  • 2 cloves of garlic, or a teaspoon of jarred garlic
  • a handful of baby carrots chopped, about 1/2-2/3 cup
  • 2 16 ounces cans of whole tomatoes, no salt added.
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 shakes of red pepper flakes or 1/8 teaspoon – omitted
  • 2 handfuls of chopped kale, approximately 1 cup
  • Spaghetti or other type of pasta – we used spinach spaghetti to add just a little extra green to our meal!
Steps:
  1. Heat oil in a saucepan.
  2. Add onion, garlic and carrots and cook for 5-7 minutes.  Stir occassionally.
  3. Start water boiling for pasta.
  4. Drain juice off the tomatoes and add the tomatoes to the pan.IMG_1850
  5. Add basil, oregano, salt, red pepper flakes if using, and kale.IMG_1851
  6. When water boils, begin cooking pasta.
  7. Bring sauce to a boil, crushing the tomatoes.
  8. Reduce to simmer and cover and cook on low.  A minute or so before the pasta is done, blend the sauce using an immersion blender, or place it in a blender or food processor
  9. Serve the sauce over the pasta and sprinkle with parmesan cheese.photo (7)
Misc: Don’t you think Little Frances’ spaghetti looks a little bit like a heart? Serve it with salad or a side of steamed broccoli and you have a nice family meal.
Timing: The ingredients can technically be introduced at 1 year, although with noodles I would suggest waiting until 18 months or you feel like your little one can handle chewing the noodles.
Difficulty: 3 out of 5. It was pretty easy, but it did have a lot of steps and you can’t just throw everything in at once and let it cook.

Confused. So Little Frances does not like spaghetti!  Until fairly recently she did not even like noodles, although now she loves them.  Usually even if she does not love something, she will eat it if I give it to her by hand and/or add a little cheese, but this she was not willing to eat this after a bit or two.  We are going to keep working on spaghetti sauce until she likes it!

Although Little Elizabeth is not yet old enough for solids, it seems she wanted a little taste of what we were eating and she reached down and helped herself to some of my salad! Smile  More on her first foods in the next few weeks.

Broccoli Orzo


My friend made this for Little Joy and I one day because her Epicutie, Little Kate, LOVES it. We agree and even my texture picky Little Asher loves it two, with some lower dairy alterations of course. I love it too; I always enjoy a serving at lunch when we make it.


Try this. Try this. Try this.


Ingredients:
  • 1 cup uncooked orzo
  • 1 to 2 large bunches of fresh broccoli; alter amount to your taste
  • 1/3 to 1/2 cup Parmesan cheese (Parmesan cheese doesn't bother little Asher like most cheeses)
  • 1/4 cup sharp cheese, shredded (I substituted one slice of sharp veggie slices so Little Asher could try it) more or less to your taste
  • splash to one tablespoon milk (we used almond milk)
  • dash pepper
Steps:
  1. Prepare orzo according to package instructions
  2. Steam broccoli and finely chop
  3. Mix all ingredients together
  4. Serve warm



Timing: 9 months as long as the ingredients have been introduced alone first to determine allergies.


Storage: 3 to 5 days in the fridge. I don't recommend freezing this.


Tip: You can boil the broccoli with the orzo to make this even easier and less clean up. I opt to steam because a) I have a steamer and b) steaming retains more nutrients than boiling. But we are mommys and sometimes we just have to focus on saving time.


Difficulty: 1 out of 5. Other than a purée this might be the easiest recipe I have posted!

Little Asher: Yummy in the Tummy; I was surprised little Asher loved this because he does not like the texture of broccoli; thats why I chop it up real fine. And he loves it. It tastes like broccoli so it's texture not taste. The first time I made this he ate so much I had to cut him off!!

Pumpkin Ravioli


Pasta is always easy and fun for toddlers, so it's always on my short list. This recipe comes from Double Delicious by Jessica Seinfeld. Since the cheese is cooked and part skim we decided to try it on Little Asher, no horrible reactions just some lower stomach issues.

Ingredients:

  • 1 (15 oz) can white kidney beans; drained and rinsed
  • 1/2 cup canned pumpkin
  • 1/2 cup part skim ricotta
  • 1/4 cup grated Parmesan
  • 3/4 garlic powder
  • dash of salt
  • 1 egg
  • 72 wonton papers
  • cornstarch
  • Your favorite marinara sauce microwaved until warm

Steps:

  1. Fill a large pot with water and bring to a boil.
  2. Place beans, pumpkin, ricotta, Parmesan and garlic in a food processor and purée until smooth.
  3. In a small bowl beat the egg with a tablespoon of water.
  4. Sprinkle a baking sheet with cornstarch.
  5. Set wonton papers on a cutting board. Place one tablespoon of the pumpkin mixture into the center of the wrapper. Brush the edges with the egg wash. Top off with another wonton paper. Press firmly together.
  6. Place the ravioli on the baking sheet. When all the ravioli is ready, carefully place them in the lightly boiling water using a slotted spoon.
  7. As soon as the rise to the top of the pot, about five minutes, they are done. Divide among 6 bowls and top with marinara sauce. Serve immediately.


Tip: Next time I make these I will use ONE wonton paper and half the filling to make the ravioli smaller and easier for toddlers to pick up. I will fold the wonton paper in half vs using two papers per ravioli.

Storage: After cooking, 3-5 days in the fridge. I recommend refrigerating IN the sauce. I froze some uncooked ravioli a for quick meal in the future.

Timing: 10 months; super easy to chew!

Difficulty: 4 out of 5; It's only high on the difficulty scale because filling the ravioli is time consuming and once out start making this recipe you can't really stop for long.

  • Little Joy: Yummy In The Tummy; Little Joy quickly ate two ravioli without prompting. She even loved it left over. Little Asher wasn't as big a fan of the left over version :)

Lentil Minestrone Soup

This recipe was submitted by my dear friend Heather; she always cooks fresh, healthy, organic and FUN things. I LOVE dinner parties with her family :) Her Epicutie Little Ray is still a little young to be sampling something like this, but I have a feeling very soon I will be featuring some of her recipes!!! Heather adapted this Lentil Minestrone Soup from "Vegetarian Cooking for Everyone" by Deborah Madison.

Ingredients:
  • 2 T olive oil
  • 2 onions, chopped
  • 3 T tomato paste
  • 1/4 c chopped parsley
  • 3-4 cloves chopped garlic
  • 2 tsp salt
  • 3 carrots, diced
  • 2-3 ribs celery, diced
  • 1 c green lentils, sorted for rocks and rinsed
  • Aromatics: 2 bay leaves, 8 parsley branches or celery leaf stalks, 6 thyme sprigs (or whatever herbs you have on hand)
  • 9 cups water
  • 2 c small pasta, cooked
  • fresh ground pepper
  • 1 T Dijon mustard (KEY ingredient)
  • 1 T red wine vinegar (KEY ingredient)
Steps:
  1. Heat oil and onion in soup pot over high heat, stirring regularly, until lightly browned, about 10 mins.
  2. Add tomato paste, parsley, garlic, veggies, and salt and cook 3 mins more.
  3. Add lentils, aromatics, and water and bring to a boil.
  4. Lower heat and simmer, covered, for 15 minutes.
  5. Add pasta, stir and cook for an additional 15 minutes.
  6. Add salt and pepper to taste.
  7. Remove aromatics from soup before serving.
  8. Serve warm.
Yeild: About 8 servings

Serve: Serve with 7 Grain Bread (post coming soon!) or other bread along with a salad for the adults.

Timing: Everything in the soup is very soft so if your little one demonstrates the ability to chew and has several teeth I would think this appropriate. Keep in mind, there is a lot going on in this dish and it can be messy since its a soup. So it might be more appropriate for the pre-toddler (12-18 months). Since Little Joy had teeth and loved finger foods, I would have offered it to her as early as 10-12 months I think.

Variations: Although I have not tried it, I think sliced mushrooms or lima beans or cut up green beans would be a great addition to the soup. Be adventurous and add more veggies your family likes!!

Difficulty: 3 out of 5; I only give it a 3 vs 2 because of the overall time involved including cook time. This is VERY easy and worth the effort.

Little Joy loved this...especially the lentils, she calls them beans (and she loves beans for some reason). She made a big ole mess with it, but really liked it. Little Joy is starting to like leftovers so by the third day she was kinda over it :)

No pictures this time, with Baby #2 due TWO DAYS AGO I am not totally on my game with documenting our food adventures!

Chicken Cheesy Pasta

Little Joy has started to prefer foods jam packed with spices and flavor and I am just not a good enough cook yet to know what spices, flavors and foods go well together. I have been on the look out for recipes that contain spices so I can learn better how to use them!

Little Joy loves pasta and cheese so when I saw this recipe on wholesomebabyfood.com (Chicken Cheesey Pasta), I just had to try it! Sometimes I have to remind myself that pastas and cheeses are very rich and filling so she wont eat quite as much of it. This was a very easy recipe and in fact---I LOVED IT TOO!!!

Ingredients:
  • 1/2 cup cooked diced or shredded chicken (I did it shredded)
  • 1/2 cup cottage cheese
  • 1 cup pasta - ditalini; slightly cooled
  • 1/4 cup steamed broccoli
  • 1/8-1/4 cup steamed carrots (or sweet potatoes) diced or smashed
  • dash of pepper, garlic powder and basil
Steps:
  • Mix all ingredients together well
  • Serve
  • NOTE: This doesnt make the greatest finger food because its got little chunks of cottage cheese and veggies. Serve as is for those accustomed to lumps & textures or chop/mash down or puree if needed.
Yield: A TON

Serve: By spoon or for an older baby they could do it as a finger food or at least SOME of the parts of the meal as a finger food.

Timing: 10 months; I only say 10 months because it has some strange textures going on all at once not to mention strong flavors.

Difficulty: 2 out of 5; it is only a 2 because it has more than a couple ingredients

Miscellaneous: Be sure your chicken stays moist, this will help ensure it is easy to mash up or for baby to grind

  • Yummy in the Tummy: Epicutie thoroughly enjoyed each bite
  • Somewhat yummy: Epicutie seemed to somewhat enjoy the food at first, but seemed to like it less with subsequent bites
  • Not so sure I like it...yet: Epicutie somewhat rejected the first bites, but seemed intrigued. The next exposure may be better!
  • Confused: Epicutie rejected the first bites, perhaps due to texture or strong flavor.
  • Sour Puss: Epicutie gave a sour face indicating she did not like the food. However--if at first you do not succeed, try, try again!
